Boning and dressing a joint of meat can be a problem. When there are millions to do, it becomes a real headache. The Meat Industry Research Institute of New Zealand (MIRINZ) sees some relief in sight. They recently announced a three-year project to automate the boning of sheep and lamb carcasses.

Using machine boners enables production yields to be increased and costs to be reduced. MIRINZ hopes that the initial work on sheep can be applied to other animals such as pigs and goats. The project is being half funded by the UK Meat and Livestock Commission. Dr Doug Wright, MIRINZ director, sees the overseas funding as a recognition of the institute's internationally significant work.
