Quick DipsKiwifruit GreeneryDSIR Fruit and Trees is pleased with their progress in developing a drying process which leaves kiwifruit a vibrant green. In the past, chemical drying produced an unattractive brown colouration and reduced the vitamin C content considerably. Research into the biochemistry of kiwifruit provided the answer. A naturally occurring substance within the fruit is now being used to prevent the undesirable breakdown. The process is under patent and the dried product is being test marketed overseas. It has excellent potential in the luxury foods market, according to DSIR scientist Dr Conrad Perera. |
